For these cupcakes, you can use any type of cupcake mix you want. I used orange dream (recipe coming next week). I'm going to focus on the decorations. After all, that's what makes them Super Bowl cupcakes.
You'll need a few supplies to start with -
- Dove Chocolate Covered almonds
- Candy Sticks (or Candy Cigarettes for those of you who remember when those weren't taboo).
- Royal Icing
- Green Frosting
- Tip #233
You may be thinking, "Where do you get candy sticks? I haven't seen those in years." Well, I read online that sometimes you can find them in mixed candy bags at the dollar store. Yeah, no. I looked everywhere. So I ended up ordering them here. But, if you want to order some, just let me know. I have a ton left over!
Ok, so now for the fun part. To make the field goals, you'll need 3 of the candy sticks. Cut one in half. Now, place the royal icing in a piping bag and use a #2 tip. Use the icing to glue the candy pieces together like the photo above. I found it worked best if I lied the horizontal piece on the counter and glued the other pieces to it that way. Make sure it dries completely, then use a small paring knife to detach it from the counter. Be very careful.
While the field goals are drying, use the green frosting and the #233 tip to make grass. It's really easy, so don't sweat. When you are finished with that, go back to your royal icing piping bag. On the almonds, draw one long line, and cross over it with three short lines. Now you have a football!
Carefully insert the field goal into the cupcake, and add the football almond. Now you're ready to party!
Have fun!
