I'm here to tell you, you can!
I got the original recipe here. But, I'm also sharing it with you.
What you'll need:
4 or 5 chicken tenderloins (not breaded)
2 flour tortillas
1/4 cup of mayo
2 tsp minced jalapenos
2 tsp jalapeno juice
3/4 tsp sugar
1/2 tsp cumin
1/2 tsp paprika
1/8 tsp cayenne (red) pepper
1/8 tsp garlic powder
dash of salt
Mexican blend shredded cheese
Directions:
To make the sauce, mix together the mayo, cumin, garlic powder, paprika, salt, jalapenos, jalapeno juice, sugar, and cayenne pepper in a small bowl. Let the mixture set for 1-2 hours. Don't skip that step, or your sauce will be sweet. The peppers need time to meld.
For the finished product, you'll need to chop the chicken into chunks and saute it. Using the same saute pan, lay a tortilla flat, and sprinkle the cheese on one half. Add the chicken on the same half as the cheese.
On the other half, spread the spread the sauce. Lightly sprinkle that half with cheese as well. Fold the sauce half over the chicken half. The cheese should melt together and "glue" the two halves.
Finish cooking your other tortilla, and slice them up and serve.
I promise, you'll love these! Hubby liked them so much he begged me to make them the next day. Not only are they really good great, they are also the closest thing to Taco Bell Chicken Quesadillas you're going to get at home.
These are a must try!
