I wanted these popsicles to be extra fresh and fruity, so they are literally just strawberries and kiwis. Honestly, I can't wait to try some different flavors!
As you may have noticed in the picture, I left the kiwi seeds in. That's because they are edible. I also wasn't sure if the kiwi would show through, so I wanted everyone to be able to see that there was kiwi in the popsicles.
Oh, did I mention these are super easy to make, too? All you need is a food processor, about 15 strawberries, 3 kiwis, and either a popsicle mold or a few cups and popsicle sticks.
In your food processor, puree the strawberries. Move your puree to a small bowl, the repeat the process with the kiwis. Mix the strawberry and kiwi purees until they are pretty intertwined. You may also add a little Strawberry Kiwi juice drink, but that's optional.
Add your mixture to your popsicle mold, and freeze overnight. This way, you can be sure they are completely frozen.
If you are using a cup and popsicle sticks, you'll need to freeze only the mixture until it is slushy enough to hold the popsicle stick up right. I would check them at 30 minutes in and then at 1 hour.
There you have it, a super easy, fresh and fruity summer snack. You and you kids are going to really enjoy these!
