Homemade Chicken & Dumplings

Today, I'm posting my favorite food. This is the ultimate comfort food. When I was in college, my Grandma would call me and ask when I was coming into town. She would make sure she had this huge meal waiting for me. I never understood why she cooked so much for one person, but she did. And, she always cooked Chicken and Dumplings.

I know everyone thinks their Grandma's food is the best, but you should seriously try these. They are the perfect combination of comfort and southern.
Here's the ingredients:
3 Chicken Breasts {bone in}
4 cups of self rising flour
1 1/2 cups of solid shortening
boiling water
salt&pepper
1 stick of butter
I can of cream of chicken

Let's start with the chicken. I personally think the pressure cooker was the best chicken related invention ever. It makes cooking a chicken super easy! So, cook the chicken in a pressure cooker. Make sure you add enough water to make plenty of broth. Sit back and relax while your chicken cooks.

While you are waiting on the chicken to cool. Start making your dough. Start boiling a small pan of water. In a large bowl, cut the shortening into the flour like you are making cornmeal. Add the water a small amount at a time. Basically, you want to make it all stick together like dough would. Be careful with how much water you add. Roll the dough out on a floured surface very thin (it will rise). Use a pizza cutter to cut vertical and horizontal strips into the dough. The pieces don't have to perfectly square. Let the dough set 1 1/2 hours.

Drain the chicken broth into a pasta pot. Add the butter and the cream of chicken. Add salt and pepper to taste, and finally, add some of the chicken. Don't add all of it. Start boiling the broth mixture. Add the pieces of dough. You can add as much as you want, and you may want to add more of the chicken. As you are adding dough, you may need to use a fork to move the other pieces out of the way. Cook until the dough is set. The dumplings will thicken as they set.

This is perfect for Sunday lunch at church. It may seem like a lot of work, but it's really worth it. I hope you enjoy these wonderful Chicken and Dumplings!
