No Bake Special K Bars

Hey there! Long time no see. I've had a lot of stuff going on. Hubby and I have been out of town, so I haven't had time to blog. Now that I'm back, let's start off with an after school snack that is quick and painless!

Now, this is just a take on the classic Corn Flake Cookies that you had as a kid, but they are a little different to. You see, I used Special K Red Berries to give them a little pop of color, and chocolate chips, well, because I had a small amount of chocolate chips I needed to get rid of.

These literally only take five minutes to make, so you can mix them up before you go to bed, and they'll be ready in the morning. Or, if you're a stay at home mom, you can mix them up and hour before the kids get home from school, and when they come in screaming that they are hungry (I almost always did that, especially as a teen), you'll have them ready.

One other thing, if you don't like bars, don't worry. You don't have to press them in to bar form. You can simply spoon them onto a cookie sheet and make Special K Cookies. I prefer the bars, but to each their own.

No Bake Special K Bars

Prep Time: 5 minutes
Cook Time: 2 minutes
Keywords: snack peanut butter Special K bar
Ingredients (12 bars)
  • 1/2 cup of crunchy peanut butter
  • 1/2 cup of granulated sugar
  • 1/2 cup of light corn syrup
  • 3 cups of Special K Red Berries cereal
  • 1/4 cup of semi-sweet chocolate chips
In a saucepan, heat peanut butter, sugar, and corn syrup until melted.
In a medium sized bowl, add Special K Red Berries, chocolate chips, and melted peanut butter mixture.
Mix well until all the cereal is moist and sticking together. If needed, add more corn syrup.
Press into an 8x8 greased pan, and cool in the refrigerator for 1 hour. You may cool outside of the refrigerator, but this will take longer.
Store covered either in the refrigerator or at room temperature.

  2. All I have a a little sugar, special k cereal, 1 can of pumpkin, some pancake mix, no milk or butter, canned peaches and thats bout it. Do you have any suggestions as to what i can make?
