Easy Chicken & Rice Casserole

Hey there! Today I'm talking about one of my favorite dishes. My mom used to make this for me all the time. It was my #1 most requested dinner. I remember coming home from softball practice and seeing it on the stove. It would literally make my day.

Not only is this Chicken & Rice dish delicious, it's super easy, too! I mean, how much easier can it get than 3 ingredients?

Did I mention your kids will love it? I can remember being a teenager with high metabolism and wanting to eat the whole pan. It's that good!

Honestly, while I love chicken and all, the best part is the rice. It has such a good flavor. I used to ask my mom if she could make this without the chicken. I'm telling you, you can't get rice that's better than this.

Chicken & Rice Casserole

Prep Time: 20 minutes
Cook Time: 30-45 minutes

Ingredients (4 servings)
  • 2-3 Boneless Skinless Chicken Breasts
  • 1 can of Campbell's Cream of Chicken Soup
  • 1 can of water
  • 1 1/2 cups of white Minute Rice
  • salt & pepper to taste
Instructions
Pre-heat your oven to 350 degrees.
Rinse off your chicken breasts, and remove all fat. Then, slice the chicken into chunks that are roughly the same size.
Using a sauté pan, begin to sauté the chicken until it turns a white color on all sides.
While the chicken is sautéing, begin to mix together the cream of chicken soup and the can of water in an 8x6 or 8x8 glass pan. There is no need to coat the pan in non-stick spray.
Add the rice to the cream of chicken soup and water, and mix well. Salt & Pepper to taste.
Add the chicken to the rice mixture and spread evenly.
Bake the chicken and rice for 30-45 minutes or until the sides start to brown a bit. The mixture should thicken up quite a bit.
Serve and enjoy!
