Chicken Salad Sandwiches - It's What's for Lunch!

I've tried to write this post so many times, but I have this amazing little dog that just wanted a lot of attention. Thankfully, I finally got her to take a nap! I guess that's what I get for treating a dog like a child. Oh well.

Back to the post. Today I'm sharing one of my favorite lunches - Chicken Salad Sandwiches.

Now, you've probably had chicken salad before. If you're like me, the chicken salad you usually see has nuts and grapes in it. This chicken salad does not. It's very simple. That's how I like it.

In case you'd like to try it, here are the ingredients:
Shredded Chicken
Pickles
Eggs
Mayonnaise
Salt & Pepper

Directions:
Shredded Chicken is the key. The easiest way to shred chicken is to use a pressure cooker. It makes it tender, and gives it this semi-flaky texture. Pressure cooking makes it super easy to pull apart. Now, you wont have chunks of chicken!

While you're letting the chicken cool, boil some eggs. I'll give you a hint, I used two chicken breasts and 3 eggs. After the eggs have boiled, peel them and chop them into small chunks. I love eggs in my salads, so I like to use a lot of eggs. 

Next, add a few chopped dil pickles. I usually start out with 5 or 6. After I add those, I add about 2 heaping tablespoons of mayo. You'll want your chicken salad to be moist, so you may have to add more. Now, add a few more pickles. This is all taste specific. I usually add more eggs than pickles, because I'm not the biggest pickle fan. As the saying goes, to each his own.

Finally, top it off with salt and pepper, and make sure you mix it well. Spread it on some bread or crackers and pair it with your favorite chips. Now you have a simple and delicious lunch.
