The Best Lemon Peppered Chicken...ever

Well hello there.

This is my first savory post on the blog, and my first dinner post. (I have done a breakfast post, so I thought I'd add that dinner part in.) I'm so excited to be adding new things to the blog. I have so much planned! So today, I'm sharing what we had for dinner last night; plus, it's healthy!

I know what you're thinking, "Lemon Peppered chicken? Everyone can make lemon peppered chicken." Well, that's not entirely true. When Hubby and I first got married (almost 3 years ago), he objected when I told him I was making lemon peppered chicken for dinner. "I don't like baked chicken," he said. When I asked why, he informed me that baked chicken was always dry. Pssh. Little did he know, I'm great at baking chicken, and you can be too!

So do you want to get that beautiful, golden brown, expertly seasoned chicken? Well here's what you need to do.

You'll need:
2 chicken breasts (or one cut in half, which is what I did)
Lemon Pepper seasoning
Aluminum foil
a deep baking pan (13x9 cake pans work great)

Directions:
Start by preheating your oven to 500. While it's heating, line your baking pan with aluminum foil. Once, I didn't do this. I ruined a baking pan. So yeah, don't skip this step. Rinse off your chicken breasts and trim any fat. While your chicken is still on the cutting board, lightly dust it with the lemon pepper seasoning.

Place the chicken, seasoned side down, in the baking pan. Now, season the other side. Here's the trick. Are you ready? Baking time for the chicken is around 30-45 minutes depending on your oven. I usually bake mine for 40 minutes total. Flip your chicken at around 12-15 minutes. Add more seasoning. Bake for another 10-12 minutes and flip again. Finish baking for the full 30-45 minutes. You'll want your chicken to be a nice golden brown.

The seasoning will give the chicken a boost of flavor. And, the juiciness will make it fantastic. I promise this will be a go-to dinner for your family. Just ask Hubby; he now loves baked chicken. 

Want to make it even better? Pair it up with wild or dirty rice and pumpernickel bread for a delightful meal.
