I've seen tons of different recipes of breakfast cookies, and I wanted to try my own. So, for inspiration I traipsed through the oatmeal aisle at the grocery store. I noticed that maple brown sugar seemed to be a popular flavor {I'm not into flavored oatmeal, so I don't know}. It also seemed to be the easiest to transform into a cookie, although apple cinnamon would probably be easy too. I'm not an apple cinnamon kind of girl though, so I decided on the maple brown sugar.
These are a super soft cookies with awesome flavor. Oh, and they taste like breakfast. You're gonna love them. Better yet, your kids will love them.
Here's what you need:
1/2 cup of brown sugar
1/2 cup of oats
1 tsp vanilla
1 tsp cinnamon
2 tblsp butter
1 egg
1 tblsp maple syrup
3/4 cups of flour
A little less than 1/2 cup of crushed rice cereal {optional}

Preheat your oven to 350, then begin mixing. First, combine the cinnamon and flour together in a small bowl. In a mixing bowl, beat together the butter and brown sugar. Add the egg, maple syrup, and vanilla, and mix well. Add the flour and cinnamon mixture, and beat until well combined. Finally, fold in the oats and rice cereal.
Use a spoon to drop the cookie dough onto a cookie sheet lined with parchment paper. This should make around 12 cookies, so spoon accordingly. Bake at 350 for 12-15 minutes. Before the cookies are completely cooked, drizzle maple syrup over them for added flavor. When finished, let them cool completely on a cooling rack.
I have no doubt that your kids would absolutely love these. They look like cookies, they taste like cookies, and they are fit for breakfast. I mean oatmeal, maple syrup, and brown sugar - how could you go wrong?
